With authentic Italian roots, and restaurants located in London and Dubai, celebrity chef Giorgio Locatelli is part of a cooking legacy. Born in Corgeno, on the shores of Lake Comabbio in Northern Italy, this Michelin star chef pays extra attention to the quality and sustainability of his ingredients. Needless to say, he has found the way to our hearts (and our stomachs). A few weeks ago, ethical muse did a feature on his restaurant, Locanda, in London. Today we are getting personal with Giorgio. Favorite holiday destination? Porto Palo di Menfi, a small fisherman’s village in Sicily. While there we stay at Da Vittorio.
Favorite jet-lag remedy? The best thing when traveling is to eat as little as possible on the plane and definitely don’t drink alcohol on a flight. This way you feel at your best when you land which helps with the jet-lag.
I never leave home without… A pen knife.

How do you personally incorporate sustainability into your lifestyle choices? I use sustainable products in the kitchen and am interested in maintaining traditional methods. My emphasis is on promoting clean, fair food. I am also an ambassador for Slow Food, a global organization that works to build links between producers and consumers.
What’s on your iPod? I don’t own an iPod – I use my wife’s.
Favorite App? SkyView– It’s great for guiding you through the stars.
What are you reading? La Cucina Salentina: Feste e ricette 365 giorni. *Roughly translated to The Salento Cuisine – Celebrations and recipes for 365 days.
What’s your typical weekday routine? I wake up and have breakfast with my wife, then I walk through Regent’s Park with my dog to Locanda. Usually I will have meetings in the morning, then I get ready for a day in the kitchen.
Early bird or night owl? A bit of both. Being a chef, I’m used to early starts and late nights.
What or who inspires you? Waking up every morning inspires me.
What song is best suited for the sound-track of your life? My Way by, Frank Sinatra.
Favorite dessert? I’m more of a savoury person. I love cheese at the end of a meal.
Favorite hotel My wife and I love Reethi Rah in the Maldives for pure relaxation.
